Apple Cheesecake Tostadas

This one is just for fun! A local Mexican restaurant serves deep fried cheesecake, and the combo of that dessert plus the tostadas they serve kind of popped this into my head. They are anything but authentic, but they still taste good! Although you really should fry the tortillas just before serving, it takes almost no time to assemble these with the apple filling made ahead of time. This would be fun to do for Cinco de Mayo.

Simmer the apples, the 6 tablespoons sugar, and 1 teaspoon cinnamon in 1 ¼ cups of the apple cider until the apples are tender. Dissolve the cornstarch in the remaining ¼ cup of cider and stir into the apple mixture. Cook until thickened. Refrigerate for at least 2 hours or overnight.

Combine the cream cheese, ¼ cup sugar, and vanilla in a food processor. Process until creamy and blended.

Combine the ½ cup of sugar with the ½ teaspoon of cinnamon, set aside.

Heat ¼ inch of oil in a frying pan over medium heat. Fry the tortillas until golden brown on each side. Drain them on paper towels, and sprinkle with cinnamon sugar while still hot (you will have extra cinnamon sugar left over).

Spread 2 heaping tablespoons of the cream cheese mixture on the tortilla. Top with 1/6 of the apple mixture. Top with whipped cream and sprinkle with chopped nuts.

Makes 6 dessert tostadas.

  3. This brought back memories of eating deep fried ice cream with my sisters at Mexican restaurants when I was a child! Not authentic, true. But really good!
