This is an amazingly light pie, fluffy and airy. Normally, I would present something this light and fruity in the summer, but it’s pink and pretty, making it a good choice for Valentine’s Day. In the summer, you could add some fresh raspberries or strawberries to top it off. The natural tartness of the pomegranate juice means you don’t need to add any lemon juice to get a sweet/tart taste. As you are eating this, you should feel very justified with every bite, after all, it’s full of anti-oxidants.
Place 1 cup of the pomegranate juice into a medium saucepan. Sprinkle the gelatin on top, and let sit for about 2 minutes to soften. Add the ½ cup of sugar, and heat over medium-low heat until the sugar and the gelatin are dissolved, about 5-7 minutes. It shouldn’t boil. Stir in the other cup of pomegranate juice, and refrigerate until the mixture starts to thicken, about 40-45 minutes. Check this regularly, you want to catch it when it is thick, but not solid. Beat the egg whites with the cream of tartar until stiff peaks form, and fold into the gelatin. Whip the ¾ cup of whipping cream, and fold in.
Mound into the 9” pie crust, and refrigerate for an hour or more.
To serve, whip the 1 cup of whipping cream and fold in the 3 tablespoons of confectioner’s sugar. Pipe the whipped cream along the edge of the pie.
